Victorinox offers a wide variety of honing rods (a.k.a. Steels) supplying professional and home chefs alike. Victorinox Steels range: from the finer cuts to the regular cuts, come in different lengths, typically between 10” and 14”, and come in both plastic and wood handles. The looped end is perfect for easy hanging when not in use.
Perfect Edge Cutlery recommends the regular cut honing rod/steel as the standard for most professional and home chefs. The length is recommended to be 2” longer than your longest knife, to allow room to pass the blade optimally along the steel without awkward readjusting that invites inconsistent results – and a duller edge.
